Hi! Keira from Ambrosia here with a really fun and easy recipe: Cannabis-Infused Dark Chocolate Coconut Balls! These simple snacks are the perfect medicated treat for anyone with a raging sweet tooth, and one of my personal favorites to bring to parties.
Look, I’ve said it before, and I’ll say it again: Dark Chocolate and Coconut are made for each other. Like Batman and Robin, Scooby and Shaggy, Han Solo and Chewbacca, Dark Chocolate and Coconut is one of the legendary dynamic duos!
- Cheese grater
- Cutting board
- Cooking pot
- Metal mixing bowl
Step 1: Coconut Ball Mixture
In a pan, mix condensed milk with desiccated coconut. Cook on low heat for about two minutes, stirring constantly.
Next, add in Cannabis-infused Coconut Oil and mix well. Not only is our coconut oil working as our source of cannabis and additional coconut flavoring, but it also helps our final product keep its shape.
Tip: We’re using desiccated coconut, dried, finely shredded coconut meat. It’s less sweet but is easier to shape when rolling into balls.
Step 2: Shaping Coconut Balls
Once our coconut mixture is fully mixed, we’re going to remove from heat and allow it to cool. Next, we’re going to form the coconut mixture into ball shapes. On a cutting board, roll the mixture against your palm in a circular motion. It might take a ball or two until you get the hang of it, resulting in some odd shapes that don’t resemble balls, but that’s okay!
Step 3: Melting Chocolate
This is my favorite part! (It involves the dark chocolate, so duh).
Using a cheese grater, grate the dark chocolate into a large metal mixing bowl. Using the double boiler method, we’re going to melt the dark chocolate.
Over high heat, bring water to a rolling boil in your cooking pot. Once it’s boiling, reduce heat to a simmer. Place metal mixing bowl of chocolate on top of the pot of boiling water. Stir until the chocolate completely melts.
Once the chocolate has melted, take the bowl off the pot to cool for a few minutes.
Step 4: Chocolate Coating
Okay, continuing my favorite part (*takes a deep breath*).
Now that our melted chocolate has cooled off, we’re going to submerge the coconut balls one at a time, slowly covering them in chocolate. Place your covered treats on a sheet of aluminum foil or a silicon kitchen mat.
Sprinkle with additional coconut and place the balls in the refrigerator to set for about 10 minutes. This is probably a good time for a smoke break.
Now we wait (*Takes another deep breath*).
Step 5: Enjoy!
Has it been 10 minutes? Oh, it has? Look in your refrigerator! You have Dark Chocolate Coconut Balls infused with cannabis! The sweet, bitter taste of the dark chocolate perfectly complements the taste of coconut. What’s so great about these treats is they’re good anytime. After dinner dessert, early morning treat, midday snack, whenever you get a craving for something sweet and medicated.
